2022 Hollick Sparkling Merlot Coonawarra – The Hollick Sparkling Merlot is a twist on Australia’s unique sparkling red wine category, which tends to be dominated by Shiraz. Utilising this classic grape from its Coonawarra vineyards in a new way has made it evident that Merlot lends itself ideally to wines of this style. Intense fruit flavours and soft structure carry through its secondary fermentation, creating a thoroughly appealing sparkling red wine. The base wine for the Hollick Sparkling Merlot is fermented as usual for dry red wine, and matured in two-year-old French and American oak for eighteen months prior to re-fermentation. The resultant wine is liquered to a predetermined sweetness upon final packaging, and is recommended for further bottle maturation.Vibrant purple with an explosion of bubbles, this wine will develop brick red hues with bottle maturation. Clean and fresh aromas of ripe blackberries and cherries are enhanced by chocolate/mocha notes.
